200kcal meal series | Step 2 of the Cambridge Weight Plan | Egg Fried Cauliflower Rice With Prawns

As you may know, I am following the Cambridge Weight Plan on Step 2 and am making good progress. I thought I would share my top 7 200 calorie meal ideas with you. This is my recipe for Egg Fried Cauliflower Rice With Prawns. You can find all of the other recipes here in my roundup post.


20g chopped spring onions

20g chopped mushrooms

40g cauliflower rice (I used a pouch for convenience, but obviously you can make your own)

1 medium egg

130g cooked, peeled prawns

A sprinkle of curry powder


This one is really straight forward to make.

First of all, dry fry the spring onions, mushrooms and prawns over a medium heat in a frying pan. Crack the egg over the ingredients and mix it in until cooked. Sprinkle on some curry powder and then add the cauliflower rice to the pan. Serve immediately.
